Gluten free brownie

We've been making a habit of baking on Wednesdays. It seems to be our library/baking day. We either do some baking before we head to the library or in the afternoon after our nap.

Speaking of naps, today's was epic. Being over 40 weeks pregnant I am loving that Miss 2.5 yrs still naps so I can too. It was wonderful.

I love reading blogs and getting inspiration for the home, baking or things to do with my toddler. A recent blog post from https://withthewhittakers.com/2016/06/26/gf-double-chocolate-chickpea-brownies/
I thought it looked delicious and better yet I had all the ingredients in my pantry!

I whipped out our aprons with my wee helper and together we quickly made the brownie. It was easy to prepare and make. It tastes pretty darn good too. I'll be making it again when I'm breastfeeding as the chickpeas will provide good nutrients and it'll make a yummy snack.

Filling the tins

A friend of ours has a newborn and had injured her arm so I decided me and S would make some biscuits and drop them round to her. We decided to bake as the week before she'd visited and commented how nice it was to have some baking. Something you just don't get time for with s newborn.

We made our go to afghan recipe. I don't know who to credit for the recipe but we got it from the lovely Nana D.

Afghan biscuits

200 gms butter softened
1/2 cup sugar (icing sugar makes for a smoother consistency)
1 1/4 cups flour
1/4 cup cocoa
2 cups cornflakes

Pre heat oven to 180 degrees on bake. Beat butter and sugar until light and creamy. Sift cocoa and flour. Stir into the butter mixture then fold in cornflakes. Spoon mounds of the mix together. Bake for 15 minutes or until set. Transfer to a wire rack to cool. When cool, ice with a mix of 1 Tbsp of butter,  1 Tbsp cocoa and 1 cup of icing sugar. If you feel like it you could top with a walnut.

For the love of reading

We have created a reader who will read anywhere. She loves listening to stories or reading to herself.

This morning we went to Storytime at our local library. My husband usually takes our little one but now that I'm on maternity leave I got to go. It was very sweet. As we are celebrating Matariki in New Zealand that was the focus of the session. We heard stories, sang songs and did an activity with a Matariki poem.

We came home with our own star.

I've been thinking up some other Matariki activities for us to do after her nap.

Unfortunately my reading pile looks like this:
Quick read magazines and half read novels. Hopefully I'll finish a book soon.

What are you reading at the moment?
